Comment from brewery : In Kashima City, Saga Prefecture, there is the Hizen-Kashima tideland, which was registered as a Ramsar Convention site in 2015. The rice [Yumeshizuku] is produced by composting the reeds harvested near that tidal flat. This sweet sake is made from Yumeshizuku rice polished to 50% and fermented slowly at low temperature in the ginjo style.
A portion of the proceeds from the sale of this sake will be used to fund activities to preserve the Hizen-Kashima tideland.
