Comment from brewery : We are dedicated to expressing the flavor of the sake rice to the maximum extent possible, and we make our sake by hand with as little equipment as possible. Akebono” sake rice, a specialty of Okayama Prefecture, is resistant to heat and does not lose its flavor when steamed. In June 2023, it won first prize at the Okayama Prefecture Bicchu Toji Kumiai (Bicchu Toji Association) Breeding Competition (no use of aromatic yeast, no use of rice grown in Okayama Prefecture. (No use of aroma component yeast, use of rice produced in Okayama Prefecture. (No use of yeast for flavor components, use of rice grown in Okayama Prefecture.) The first prize was awarded in the judging category.

Use of rice grown in Okayama Prefecture. No use of aromatic yeast. was awarded first place in the Okayama Prefecture Bicchu Toji Association’s product review (section 2), which was a requirement. This umami sake is made with a special focus on expressing the flavor of Akebono, a specialty sake rice of Okayama Prefecture grown in the brewery’s vicinity. It is recommended to be served on the rocks or hot (65℃ is optimal) to enjoy the change in flavor.
