Jiemon Mizutani, who served as a village headman at the present location at the end of the Edo period, was founded and has a history of more than 200 years. The current director is the fifth generation.
Today, part of the brewery is still in the building in which it was founded, and the brewery continues to repair and maintain it, making sake in a traditional environment and with traditional techniques.
We are doing our best to brew sake that will be a part of your life and relax your mind, which may not be flashy.

Comment from brewery : This refreshingly sweet Junmai Daiginjo is made with Aichi sake rice “Yumeginga” and uses Aichi-born yeast and koji, all ingredients from Aichi Prefecture.
We are committed to communicating “food education” through this sake.
We hold five events a year: rice planting, weeding, rice harvesting, sake brewing, and tasting sessions. Visitors can experience and learn about the production process from rice to sake.
The events are attended not only by locals, but also by foreign residents and exchange students.
The sake is named “Senpyo Kanade” (千瓢奏 Senpyo Kanade) with the idea that consumers and producers work together like an orchestra in which many people join forces to play (Kanade in Japanese).
